Cucumber Radish Slaw (THM FP, Gluten Free, Low Carb)

This Cucumber Radish slaw is simply a wonderful addition to any meal. it’s light and refreshing and super simple to throw together.

With summer coming to a close I don’t know about you but I find that I’m getting over run with some of what we planted. Not that I’m complaining I love my garden fresh produce.

 

This zippy little slaw recipe is great paired with a cold cut sandwich or even with some BBQ whatever… it cleanses your palate and helps fill you up with non starchy veggies that have almost no impact on your waistline.

I bet you could even add a few more ingredients and bring a can of tune to new dimensions.

 I was just trying to make it look pretty for you. You can also do this by slicing everything really thin and combining it, honest it really is that simple, and we ALL love simple.

 

 

I normally keep things like this cucumber radish slaw on hand because it makes life a little more interesting… adds variety to my plate and my husband loves his fresh veggies.

This recipe makes three or four servings depending on how hungry you are. It’s also extremely budget friendly this time of year. You can also bulk it up a bit with more peppers maybe some mushrooms, just try to keep everything non starchy so that it continues to be a slimming salad.

A refreshing simple cucumber radish slaw that is sure to please. This slaw is a wonderfully healthy addition to roasted meats.

Ingredients
  • 2 Tbs Apple Cider Vinegar
  • 1 tsp Olive Oil
  • ½ tsp THM Gentle Sweet (1/4 tsp THM Sweet Blend)
  • ¼ tsp High Mineral Salt
  • ⅛ tsp Black Pepper
  • 2 cups Cucumber strings or slices
  • 1 cup Radish strings or slices
  • ½ cup Red pepper Strips
  • 2 TBS Green Onion, Chopped
Instructions
  1. In a large bowl whisk the first 5 ingredients together.
  2. Add remaining ingredients and toss to coat.
  3. Serve immediately or chill for 2 hours before serving
