Mocha Almond Skillet Brownie

A delicious brownie for two
Ingredients
  • 3 TBS THM Baking Blend
  • 2 TBS Almond Flour
  • 2 TBS Cocoa Powder
  • 2 TBS THM Gentle Sweet or Sugar Free Brown Sugar
  • 1 tsp baking powder
  • ¼ tsp high mineral salt
  • 3 TBS brewed coffee
  • ½ tsp vanilla extract
  • 1 egg
  • 3 TBS Melted coconut oil/ Butter
  • 2 TBS Stevia Sweetened Chocolate Chips
Instructions
  1. Preheat oven to 325
  2. Add all dry ingredients to a small bowl and whisk together.
  3. Add wet ingredients to dry and combine to form a thick batter
  4. Stir in the chocolate chips
  5. Spread batter into a greased/buttered cast iron skillet or baking dish.
  6. Place in oven and Bake for 13-15 minutes or until center jiggles slightly.
  7. Remove from oven and allow to cool for 2-3 minutes, cut and serve
Notes
You can top this with whipped cream or do like I did and use some cottage peanut butter whip.
