Nutty Banana Crunch Cereal

A Healthy Sugar Free Low Carb Cereal
Ingredients
  • ¼ cup ground almonds or almond meal/flour
  • ¼ cup whey protein
  • ⅓ cup sweetener ( I used homemade sweet blend)
  • 1 tsp banana extract
  • ½ tsp baking powder
  • ¼ cup coconut oil
Instructions
  1. Preheat oven to 300 degrees F.
  2. Combine sweetener, ground almonds, protein powder, baking powder and extract in a small bowl. Cut in the coconut oil with a fork until mixture resembles coarse meal, like butter crumble.
  3. Place on a cookie sheet with defined edges or the coconut oil will leak off.
  4. Bake for 12-20 minutes or until golden brown. Remove from the oven and gently stir while still hot.
  5. Let cool on the cookie sheet (it will crisp up A LOT as it cools).
Notes
Serving size is ½ cup.
