A wonderful replacement for canned pineapple made from garden fresh zucchini. They will never know the difference!!
Ingredients
4 quarts zucchini (peeled and grated)
46 ounces water
1½ cups lemon juice
1½ cups THM Gentle Sweet
2 teaspoons pineapple extract/flavoring
Instructions
Peel and grate zucchini. Set aside.
Place Water, lemon juice, and gentle sweet into a saucepan over medium heat. Bring to a boil and boil for 2-3 minutes. Remove from heat.
Stir in zucchini and pineapple extract/flavoring.
Allow mixture to sit for a minimum of 24 hours before use.
Canning instructions:
Ladle hot mixture into sterilized jars with ½" headspace, remove air pockets. Place lids and rings onto Jars and process in a hot water canner for 15 minutes. Allow to cool and store in cupboard for up to 6 months.
Notes
You can also use chunks of zucchini in place of the shredded zucchini for tid bit style.
