Mix baking blend, protein powder, sweet blend, baking powder and salt in a medium bowl. Cut butter and coconut oil into dry ingredients until crumbly.
Dump mixture onto a rimmed baking sheet lined with parchment and bake for 20 minutes.
sprinkle topping mix over hot cereal mixture as soon as you remove it from the oven. allow to cool on baking sheet for 5 minutes. Use a fork to break mixture up slightly into crumbles and allow to cool fully. This mixture will crisp up as it cools.
Store in an airtight container for 2-3 weeks if it lasts that long.
