This Shrimp Creole Sheet Pan Supper is a great way to fuel your body to trim and healthy. While following Trim Healthy Mama or a low carb way of eating.
10 ounces okra pods (sliced lengthwise, I used fresh)
1 large red bell pepper (halved)
1 teaspoon Creole seasoning (I like to use this one from Nana's Little Kitchen)
8 ounces large shrimp (peeled and deveined)

Preheat broiler to high with rack set 6" from heat.
Line a baking sheet with foil and spray with coconut oil spray.
Slice Okra Pods lengthwise and coat with 1 TBS of oil. Toss with THM Baking Blend.
Place okra and bell pepper skin side up on baking sheet and broil for 10 minutes. Wrap pepper in foil and allow to rest for 10 minutes. Peel and chop pepper. remove from baking sheet and keep warm.
Combine 1 Tbs of oil with creole seasoning and coat shrimp within a medium bowl. move okra to each side of foil lined baking sheet and broil shrimp for 10 min on each side or until no longer pink. Garnish platter with roasted peppers.
