Chicken Cacciatore

This healthy version of classic chicken cacciatore is easy to make in your Crock Pot or Instant Pot. It is sure to be a healthy family favorite.
Ingredients
  • ½ cup onion (sliced)
  • ½ cup celery (with leaves, cut in 1-inch pieces)
  • 6 ounces tomato paste (1 can with garlic)
  • ½ cup okra (blended)
  • 1 cup water (or chicken broth, divided)
  • ¼ teaspoon pepper
  • 1 teaspoon creole seasoning
  • 1 bay leaf
  • 1½ cups mushrooms (sliced)
  • 2 teaspoons garlic cloves
  • ½ teaspoon basil
  • 2 teaspoons oregano
  • 2 teaspoons coconut oil
  • 2 pounds chicken pieces, I used boneless skinless breasts
Instructions
Crock pot Instructions:
  1. Place sliced onion in bottom of crock pot. Add chicken.
  2. Blend okra with ½ cup of water until liquefied. Stir together tomato paste, okra mixture, creole seasoning, pepper, garlic, herbs, and ½ cup of water or chicken broth. Pour over chicken.
  3. Cover and cook on LOW for 7 to 9 hours (HIGH 3 to 4 hours).
Instant Pot Instructions:
  1. Place your liner into your instant pot. Press Saute add 1-2 tsp coconut oil to liner along with chicken pieces, sear until pink in the middle. Add onion to liner with the chicken pieces. turn off saute function.
  2. Blend okra with ½ cup of water until liquified.Stir together tomato paste, okra mixture, creole seasoning, pepper, garlic, herbs, and ½ cup of water or chicken broth. Pour over chicken.
  3. Place lid on your Instant Pot. place vent into the sealing position and process on manual high for 15 minutes with 15 minutes of Natural Pressure Release.
You could also use the Poultry preset on your pot for processing, allow 15 min Natural Pressure Release when cycle finishes.
Notes
Serve chicken over steamed broccoli, cauliflower rice or Dreamfeilds pasta (personal Choice), wonder wrap pasta (THM Cookbook page ) or this Homemade Pasta Dough made into noodles.
