Nutty Butter Snack Cakes

Sugar free, gluten free peanut butter snack cakes.
Ingredients
  • 1 15 oz can canelli beans, drained and rinsed
  • 2 eggs + ⅔ cup egg whites
  • ¼ cup defatted peanut flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • 3 TBS coconut oil
  • 2 tsp peanut butter extract or vanilla extract
  • ⅓ cup ricotta cheese
  • ¼ cup organic stevia sweetener blend
Instructions
  1. Preheat oven to 350F.
  2. Place all ingredients into blender and process on high for 3-5 minutes or until smooth.
  3. Pour batter into pan cavities.
  4. Bake for 20-25 minutes
