Apple and Oat Scones

Apple and Spice studded oat flour scones.
Ingredients
  • 2 cups oat flour
  • 1 teaspoon cream of tartar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 Tablespoons Sugar Free Brown Sugar
  • 3 Tablespoons unsweetened applesauce
  • 2 Tablespoons water
  • ½ cup unsweetened almond milk
  • 3 Tablespoons Egg BeatersĀ® 99% egg substitute
  • 1½ teaspoons cinnamon
  • 1 cup apple, diced ( I normally use granny smith apples)
  • 2 Tablespoons old-fashioned rolled oats
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C)Lightly grease two baking sheets, or use an 8" cake pan. I used this Scone pan from World Market.
  2. In a large bowl, combine flour, cream of tartar, baking soda, salt, sugar free brown sugar and cinnamon. Add the applesauce, egg whites, water and milk; mix well. Stir in apple pieces.
  3. Drop large rounded spoonfuls of batter onto prepared baking sheets. Or form a loaf and cut into 8 wedges, separate slightly before baking.(you may want to make sure your hands are wet so that the batter doesn't stick to your hands.
  4. (I sprinkled the tops with toasted oats and a bit of sugar free brown sugar.)
  5. Bake at 400 degrees F (200 degrees C) for 15-20 minutes. Let cool before serving.
