Double Berry Crunch

Ingredients
  • ½ cup THM Oat Fiber
  • ½ cup THM Pristine Whey Protein: Strawberry
  • ¼ cup THM Super Sweet Blend
  • ½ teaspoon baking soda
  • ½ cup soft butter (or coconut oil)
  • 1 teaspoon strawberry extract
  • ½ cup Freeze-dried strawberries
Instructions
  1. In a small bowl mix together the Oat fiber, Whey, Sweetener and baking soda.
  2. Cut the butter or coconut oil into the dry ingredients and blend in the extract.
  3. Dump dough onto a parchment lined rimmed baking sheet (this keeps the fat from running off during baking (it's important). Press the dough into a ¼" thickness and bake at 325 degrees for about 12-15 minutes.
  4. Remove baking sheet from oven and score the cereal with a butter knife, pizza wheel or pastry wheel while still hot. allow to cool to room temp before breaking apart the pieces. you can also stir while it is cooling to get crumbles.
  5. This cereal crisps as it cools so while it is hot it is really soft.
  6. Toss with freeze-dried strawberries and store in air tight container.
