A traditional Irish and british skillet breakfast that uses leftovers from a roast beef or corned beef dinner.
Ingredients
  • Irish Colcannon
  • 1 cup cooked Brussels sprouts (shredded)
  • 4 ounces cooked corned beef brisket (shredded)
  • 2 tablespoons butter
Instructions
  1. Shred brussels sprouts and corned beef.
  2. Combine shredded mixture with colcannon.
  3. Melt butter in a large skillet, and place mixture in skillet, flatten until it fills the pan from edge to edge and is about ½ to 1 inch thick.
  4. Fry until a crisp crust forms then invert onto a serving platter.
  5. Serve with eggs or as a stand alone dinner.
Notes
This is a very forgiving recipe. The measurements are not normally exact. You can use a combination of cabbage, kale and brussels sprouts for your greens or leave ove of them out. Just make sure that your "mash" holds things together.
