Measure sprouted flour, oat fiber, baking powder, mineral salt, sweet blend and cinnamon. Whisk to combine or use a flour sifter so that everything is mixed well.
Add greek yogurt and mix well. Knead dough in the bowl for 1-2 minutes. Dough will be sticky.
Line a baking sheet with parchment paper and preheat oven to 400 degrees
Dust your hands with oat fiber and form 4 buns. Place buns on baking sheet.
Brush with egg white and bake for 25 minutes at 400 degrees in the oven or 360 degrees in your Air Fryer.
For the Glaze:
place all ingredients in a small bowl and whisk to combine. Drizzle in a cross shape across the top of the buns.
