Creamy Bacon & White Cheddar Mashed Cauliflower makes a great side dish that pairs well with your healthy meals. If you are following a Trim Healthy Mama or Low Carb lifestyle these are perfect for you.
Ingredients
  • 1 pound cauliflower flowerets (steamed and squeazed)
  • 2 tablespoons butter
  • 1 teaspoon THM Simply Sunflower Lechithin (optional, but makes it creamy)
  • 4 ounces cheddar cheese (shredded)
  • 2 ounces cooked bacon (crumbled)
Instructions
  1. Steam Cauliflower and squeeze excess moisture from it.
  2. Add butter and Sunflower lecithin mash until smooth. (I use my blender for this.)
  3. Stir in white cheddar and bacon bits.
