- 1 cup barley, cooked
- 2 cups boneless chicken (cooked, cubed), optional
- ½ cup chopped celery
- 2 cups chopped cucumber
- 2 Tablespoons chopped parsley
- 1 cup roasted red pepper (chopped)
- 1 cup red onion (sliced)
- 2 ounces feta cheese (crumbled)
- 2 cups cherry tomato (halved)
- Place cooked barley into a large mixing bowl.
- Add remaining ingredients and toss gently to combine.
- May be served warm or cold
We love this served over a bed of dark leafy greens.
