A simply spiced peach preserves recipe that has added fiber, is sugar free and makes for a great topping on toast or swirled into yogurt. It is also an amazing Homemade gift for your favorite Trim Healthy Mama.

  1. Prepare calcium water:
  2. Place ½ cup water into a small jar, add 2 teaspoons of calcium powder to water. place lid on jar and shake until dissolved. Set aside.*
  3. Prepare your jars lids and bands.
  4. Sterilize jars and heat up your canner.
  5. Rinse and prepare peaches by skinning, putting and chopping into uniform pieces.
  6. Add prepared peaches to a medium sauce pan with ¼ cup water.
  7. Bring to a boil, Stirring occasionally.
  8. Cook for 3 to 5 minutes allowing fruit to soften but still old it's shape. Remove from heat.
  9. Measure 4 cups of mixture and return it to the saucepan (Reserve any extra for another use*)
  10. Add lemon juice and calcium water to mixture and stir to combine.
  11. In a separate bowl combine sweetener, pectin powder, ginger and baobab powder -- mix well and set aside.
  12. Bring mixture to a full boil, and slowly add pectin mixture, stirring constantly. Bring mixture to a full boil stirring vigorously for 1-2 minutes or until the pectin is dissolved.
  13. When mixture reaches a full boil remove from heat.
  14. Lade hot preserves into hot jars, leaving ¼ inch headspace.
  15. Remove trapped air bubbles, wipe jar rims to ensure there is nothing on the rim.
  16. Place lid on jar and screw band into place until finger tight.
  17. Lower jars into canner ensuring that they are not touching. Make sure that you have 1-2 inches of water above the jar lids. Place lid on canner and return to a roiling boil.
  18. Process your preserves for 10 minutes then turn off the heat. allow the canner to sit covered for 5 minutes before removing jars from the water.
  19. Remove jars and allow to cool at room temperature for 12-24 hours. Check that jars have sealed and store properly.
