Cheddar Pepper Mini Quiche

Ingredients
  • 4 eggs
  • ¼ cup ½ and ½ or heavy cream
  • 1 bell pepper, diced
  • ½ onion, diced
  • ½ cup mushroom pieces
  • ¼ cup cheddar, shredded
  • 3 low carb tortillas (soft taco size) or 6 of the smaller ones (fajita size)
Instructions
  1. Preheat oven to 350. Coat muffin wells with coconut oil.
  2. place low carb tortilla into muffin wells.
  3. Whisk eggs and heavy cream together. Set aside.
  4. Place some of the peppers, onions, and mushrooms into the tortilla lined wells.
  5. Pour eggs over filling and sprinkle with cheddar.
  6. Bake in 350 degree oven for 20-25 minutes.
