Sweet & Salty Roasted Pumpkin Seeds are a wonderful autumn treat packed full of nutrients and pumpkin spice flavor.
Ingredients
Instructions
  1. Mix the salt into the water until dissolved.
  2. Soak pumpkin seeds over night in the brine water.
  3. Then drain
  4. Combine monkfruit sweetener and pumpkin pie spice in a small bowl.
  5. Toss pumpkin seeds with sweetener mixture until well coated
For the Oven
  1. Spread seeds onto a shallow baking pan and roast for 1 hour in a 350 degree oven.
For the Air Fryer
  1. Preheat Air Fryer to 360 degrees. spread seeds evenly across the basket. Toast seeds for 35 minutes
  2. Shake the basket 2 or 3 times during the cooking process for even browning.
  3. Allow to cool. Enjoy!!
