In a medium bowl, combine whey, baking blend, baking powder, mineral salt, sweetener, italian seasoning.
In a measuring cup whisk egg white, xanthan gum and greek yogurt until it foams up (mine reached a full 1 cup measurement using my frother)
Stir the wet into the dry trying not to knock the air out of the egg whites.
Grease the pans, and pour ½ the dough into each one.
Place pans into the oven or air fryer (cover pans in the air fryer so they don't burn on top, see my notes in article on how to do this). Bake for 8 minutes.
Remove pans from oven or air fryer, spoon 1½ TBS of sauce onto the crusts, top with your favorite toppings. (see tip in article on how to ensure your pepperoni don't fly up into the heating element of your air fryer)
Place pans back into the oven or air fryer and cook for an additional 5-8 minutes until the cheese is melted and golden.
Allow to rest for a couple minutes before serving. Enjoy!!
