French Toast Sticks

A family friendly healthier version of french toast sticks that are easy to make in your air fryer or oven.
Ingredients
Instructions
  1. Preheat oven or air fryer to 350 degrees.
  2. In a medium bowl, combine whey, baking blend, baking powder, mineral salt, sweetener and cinnamon.
  3. In a measuring cup whisk egg white, vanilla extract, xanthan gum and greek yogurt until it foams up (mine reached a full 1 cup measurement using my frother)
  4. Stir the wet into the dry trying not to knock the air out of the egg whites.
  5. Spray pans with cooking spray and fill each hole about ½ full
  6. Place pans into the oven or air fryer (cover pans in the air fryer so they don't burn on top, see my notes in article on how to do this). Bake for 8-12 minutes.
  7. Sprinkle finished sticks with sweetener & cinnamon.
  8. Allow to rest for a couple minutes before serving. Enjoy!!
Notes
Serve with a steaming cup of collagen tea or coffee.
Add some yogurt and berries or cut up fruit for the kids.
