Toast the sprouted corn tortilla (or one that is made with masa) in your air fryer for 10 mintues. Remove and let cool slightly before grinding with the THM oat fiber.
Place egg whites into a small bowl. Put corn mixture onto a plate or shallow bowl for dredging. Roll fish pieces in corn mixture, dip in the egg whites and roll them again in corn mixture. Repeat until it forms a good crust on the our side of the fish pieces.
Place coated fish pieces on a piece of perforated parchment and spritz with oil.
Air fry for 12 minutes at 370 degrees flipping at 6 minutes for even browning.
Bake at 400 for 15 minutes, turn fish at 7 minutes for even browning
