Grandma's Almond Butter Cookies

Ingredients
  • 1 cup THM Baking Blend
  • 1 Tablespoon sweetener, I used Pyure Organic Stevia All Purpose Sweetener
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 egg
  • ¼ cup butter, at room temperature
  • ¼ cup almond butter
  • 1 teaspoon vanilla extract
If you do not have the THM Baking Blend use this to substitute
  • ½ cup of oat fiber
  • ¼ cup almond flour
  • 2 TBS coconut flour
  • 1 TBS gelatin
  • 1-2 TBS almond milk
Instructions
  1. Preheat oven to 325.
  2. Cream butter, Almond butter and sweetener. Add egg and vanilla extract
  3. Add baking blend, baking powder and baking soda , mix to combine
  4. Drop by rounded teaspoon on baking sheet and bake for 6-8 minutes.
Notes
The substitutions for the THM baking blend will not produce the same results as using the THM Baking Blend. They will however give you a good texture for these cookies.
