1 Tablespoon sweetener, I used Pyure Organic Stevia All Purpose Sweetener
1 teaspoon baking soda
1 teaspoon baking powder
1 egg
¼ cup butter, at room temperature
¼ cup almond butter
1 teaspoon vanilla extract
If you do not have the THM Baking Blend use this to substitute
½ cup of oat fiber
¼ cup almond flour
2 TBS coconut flour
1 TBS gelatin
1-2 TBS almond milk
Instructions
Preheat oven to 325.
Cream butter, Almond butter and sweetener. Add egg and vanilla extract
Add baking blend, baking powder and baking soda , mix to combine
Drop by rounded teaspoon on baking sheet and bake for 6-8 minutes.
Notes
The substitutions for the THM baking blend will not produce the same results as using the THM Baking Blend. They will however give you a good texture for these cookies.
