Mediterranean Celery Salad

Ingredients
  • 4 cups celery (sliced thin)
  • ½ cup Athenos Fat Free Traditional Feta Crumbled Cheese
  • ¼ cup chopped walnuts (optional)
  • ¼ cup parsley (chopped)
  • 2 Tablespoons lemon juice (fresh or bottled)
  • 3 Tablespoons extra virgin olive oil
  • ½ teaspoon French's Dijon Stone Ground Mustard
  • ½ teaspoon honey (optional)
salt & black pepper to taste
Instructions
Prepare the Celery:
  1. Wash and slice the celery into thin bite size pieces.
Make the Dressing:
  1. In a small Bowl, whisk together the lemon juice, olive oil, Dijon Mustard, honey(if using) salt and black pepper.
  2. Set aside
Combine the Ingredients:
  1. In a large bowl, toss the celery, feta cheese, walnuts (if using) and the parsley.
Dress the Salad:
  1. Drizzle the dressing the celery mixture and toss until evenly coated.
Serving & Storage:
  1. You can serve this salad immediately, however allowing it to sit and chill for 10 minutes will enhance the flavors.
  2. This Celery salad can be stored in the refrigerator for about 5 days.
