Mediterranean Celery Salad

- 4 cups celery (sliced thin)
- ½ cup Athenos Fat Free Traditional Feta Crumbled Cheese
- ¼ cup chopped walnuts (optional)
- ¼ cup parsley (chopped)
- 2 Tablespoons lemon juice (fresh or bottled)
- 3 Tablespoons extra virgin olive oil
- ½ teaspoon French's Dijon Stone Ground Mustard
- ½ teaspoon honey (optional)
- Wash and slice the celery into thin bite size pieces.
- In a small Bowl, whisk together the lemon juice, olive oil, Dijon Mustard, honey(if using) salt and black pepper.
- Set aside
- In a large bowl, toss the celery, feta cheese, walnuts (if using) and the parsley.
- Drizzle the dressing the celery mixture and toss until evenly coated.
- You can serve this salad immediately, however allowing it to sit and chill for 10 minutes will enhance the flavors.
- This Celery salad can be stored in the refrigerator for about 5 days.
