in a small bowl, prepare the guacamole, adding 2 TBS of baking blend to the mixture so that it thickens like brownie batter.
Using a spoon or scoop, scoop mounds of guacamole onto a parchment lined sheet. Place in freezer for 20 minutes until firm.
Remove guacamole from freezer and roll the mounds into balls. Roll in baking blend, dip into egg white and then roll in the bake & fry mix.
Place coated balls onto air fryer racks, spritz with oil and bake for 8 minutes at 360 degrees. If you are making in batches you may need to check them at 6 min.
Be careful removing them from the fryer as they are very delicate and the shell will break with too much pressure. They do firm up as they cool off.
Notes
* If you do not eat pork you can substitute 2 of the low carb whole wheat tortillas that have been toasted and ground for the Bake & Fry Mix.
