This baked macaroni & cheese is classic comfort food. Rich and creamy and oh so satisfying it comforts the soul while helping you along to trim and healthy.
Ingredients
For the Noodles
For the Cheese Sauce
  • ½ cup chicken broth
  • ½ cup unsweetened almond milk
  • ¼ cup unsalted butter
  • 1½ cups mozzarella cheese, part skim milk (shredded)
  • ½ cup cheddar cheese, shredded
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground nutmeg (optional)
For the Topping
Instructions
  1. Make the noodle dough and chill in the refrigerator while you make the cheese sauce.
  2. Bring a large pot of salted water to a boil.
  3. In a small sauce pan heat the chicken broth, almond milk and butter until the butter is melted. Add the cheese and allow to melt, stirring until smooth.
  4. Add ground black pepper and nutmeg.
  5. Stir to combine.
  6. Press pasta into 1-2 inch noodles.
  7. Add noodles to water and cook for 1- 2 minutes
  8. Drain and add cheese sauce.
  9. Stir until noodles are coated in cheese sauce.
To assemble the casserole:
  1. Butter your baking dish
  2. Pour the noodle and cheese mixture into the casserole and bake for 15 minutes at 350 degrees or until golden.
Notes
You can make this into a Full meal by adding shredded chicken and broccoli florets before adding the cheese sauce to the noodle mixture.
