This Air-Fryer Corn Crusted fish has been a wonderful way for me to get more fish onto our dinner menu. Fish has never been a big thing in our house because Rick really doesn’t like it. He is also allergic to salmon and trout, refuses to eat tilapia and catfish which makes it hard to have fish as dinner.
I do keep fish fillets in the freezer and normally enjoy them for lunch while I am working at home. I had an orphan sprouted corn tortilla after making Sprouted Corn Chips so used it to test this recipe for you.

I really struggle with remembering to get fish of any sort into my meal rotation. I know that it is better for me but yeah it is a struggle. Do you have a food that you struggle with?
I really like battered fish over breaded but this air~fryer corn crusted fish hits the spot (until I can figure out the batter part). When making this corn crusted fish you may want to add some more seasoning to the corn mixture, but the sprouted chips really brought a nice corn flavor to the dish.
What Kind of Corn Tortillas to Use
I know when I posted the Sprouted Corn Chips recipe I had a ton of people asking if they could use regular corn tortillas. The answer to that question is yes, however they need to be made with lime. I did find these thin corn tortillas from Mission Foods and would suggest using them because we THM’s really want to limit the corn in our dishes so we can get the best results while in weight loss mode.
How To Make Corn Crusted Fish Tacos
I made fish tacos out of my corn crusted fish nuggets but you can also do this with the whole fillet too. Thes make a fun family meal for the kids and adults alike. Fish tacos weren’t a thing when my kids were growing up, but two of them really enjoy them now. I still have one hold out, but am praying that will change.
When following the Trim Healthy Mama Plan you are going to want to keep your fats low in this meal. How I did that was to use baby romain as my shell and I topped with yogurt I make in my Instant Pot {you can find that recipe here} and some fresh tomato salsa from The Healthy Milestone. Pair this up with a baby frappe from the Trim Healthy Mama Cookbook and you are good to go!
What You Need To Make Air~Fryer Corn Crusted Fish
The kitchen tools I use when making this corn crusted fish are:
- My Power Air Fryer Oven
- a small bowl to hold my egg whites
- a small plate to hold the corn mixture
- food prep gloves (to keep the egg, etc off my hands)
- these Homemade Perforated Parchment Sheets (to avoid them sticking to my racks)
- a pair of tongs for turning the fish
- My Misto Oil Sprayer (filled with Avocado Oil or Extra Virgin Olive Oil)
How I Made Air~Fryer Corn Crusted Fish
- Serves: 1
- Serving size: 3 oz
- Calories: 145

- 3 ounces cod fillet
- 2 Tablespoons egg white
- 1 each Sprouted Corn Tortilla or you can use these (toasted and ground)
- 1 Tablespoon THM Oat Fiber
- Toast the sprouted corn tortilla (or one that is made with masa) in your air fryer for 10 mintues. Remove and let cool slightly before grinding with the THM oat fiber.
- Place egg whites into a small bowl. Put corn mixture onto a plate or shallow bowl for dredging. Roll fish pieces in corn mixture, dip in the egg whites and roll them again in corn mixture. Repeat until it forms a good crust on the our side of the fish pieces.
- Place coated fish pieces on a piece of perforated parchment and spritz with oil.
- Air fry for 12 minutes at 370 degrees flipping at 6 minutes for even browning.
- Bake at 400 for 15 minutes, turn fish at 7 minutes for even browning
