Air fryer roasted beets have an awesome earthy flavor that can be eaten in many ways. They are perfect added to salads or as is for a simple healthy side dish.

Sometimes people have trouble with the earthy flavor of beets. I know that Rick isn’t a huge fan, but he does eat smaller portions of them for health reasons. Personally, I have always loved pickled beets especially on top of a Greek salad with a bit of crumbled feta.
They are amazing drizzled with a bit of balsamic vinegar and sprinkled with salt and pepper.

Air Fryer Roasted Beets
- Serves: 4
- Serving size: ½ cup
- Calories: 49

- 1 pound fresh beets (Washed and scrubbed well)
- Wash and scrub your beets, you do not have to peel them nor do you have to cut them up.
- Wrap Beets in foil or parchment paper and place in your air fryer in a single layer.
- Set air fryer to 390 degrees for 45-60 minutes
- Rotate beets about halfway through the cooking time for even cooking.
- Allow to cool and either slip the peels off or enjoy a mor earthy flavor by leaving the skins on.
- Place beets into your air fryer and roast at 390 degrees for 25-30 minutes
- Rotating the beets about ½ way through the cook time.
