My Husband’s Reaction to this Creamy Carrot & Pineapple Smoothie
My husband was skeptical of combining carrots with pineapple and he wouldn’t let me make him his own Creamy Carrot & Pineapple Smoothie. But after he took a tentative sip of mine he of course wanted his own. What a Win for this mama (he really is picky about smoothies).
Baobab Powder
So let’s talk a bit about that optional ingredient down there in the recipe called Baobab Powder. I’ve been eyeing this super food powder for a while at Wal-Mart, but you can also get it from Amazon. It is a great addition to this smoothie adding calcium, magnesium, vitamin C and other minerals plus it adds fiber without a huge load of carbs. Which helps to keep your blood sugars stable. So maybe take a look at this when you can.
The Printable Creamy Carrot & Pineapple Smoothie Recipe

- Calories: 220
- Fat: 2g
- Carbohydrates: 40g
- Sodium: 366mg
- Fiber: 8g
- Protein: 14g
- Cholesterol: 5mg
- ½ cup crushed pineapple in juice (I used fresh chunks with the core for added fiber)
- ⅓ cup carrot (shredded)
- ¼ cup 0% Greek Yogurt
- ¼ cup cottage cheese, lowfat
- 1 teaspoon THM Super Sweet Blend
- ½ teaspoon ground cinnamon
- 2 Tablespoons Baobab Powder (optional)
- ½ cup unsweetened almond milk
- 1 cup crushed ice
- Layer ingredients into your blender per manufactures recommendation. Blend until smooth. Enjoy

I noticed on your Amazon link that you recommend a sprouted spelt flour. What do you bake with this?

I use sprouted spelt to make bread at times when I want to take a break from wheat flour 🙂
