Creamy Carrot & Pineapple Smoothie

I’m loving this Creamy Carrot & Pineapple Smoothie, it brings a breath of summer into my day each time I make it.

Combining Carrots &Pineapple in this smoothie has been such a blessing for my journey following Trim Healthy Mama. This creamy carrot & pineapple smoothie is a wonderfully energizing smoothie!!

This Creamy Carrot & Pineapple Smoothie is packed full of Vitamin A, Potassium, Vitamin C, Fiber and so much more. This smoothie comes in at 14 grams of protein and 32 grams of carbs, so even if you aren’t following the Trim Healthy Mama lifestyle it is a wonderful addition to your day.

My Husband’s Reaction to this Creamy Carrot & Pineapple Smoothie

My husband was skeptical of combining carrots with pineapple and he wouldn’t let me make him his own Creamy Carrot & Pineapple Smoothie. But after he took a tentative sip of mine he of course wanted his own.  What a Win for this mama (he really is picky about smoothies). 

 

Baobab Powder

So let’s talk a bit about that optional ingredient down there in the recipe called Baobab Powder. I’ve been eyeing this super food powder for a while at Wal-Mart, but you can also get it from Amazon. It is a great addition to this smoothie adding calcium, magnesium, vitamin C and other minerals plus it adds fiber without a huge load of carbs. Which helps to keep your blood sugars stable. So maybe take a look at this when you can.

Ingredients
  • ½ cup crushed pineapple in juice (I used fresh chunks with the core for added fiber)
  • ⅓ cup carrot (shredded)
  • ¼ cup 0% Greek Yogurt
  • ¼ cup cottage cheese, lowfat
  • 1 teaspoon THM Super Sweet Blend
  • ½ teaspoon ground cinnamon
  • 2 Tablespoons Baobab Powder (optional)
  • ½ cup unsweetened almond milk
  • 1 cup crushed ice
Instructions
  1. Layer ingredients into your blender per manufactures recommendation. Blend until smooth. Enjoy

    I noticed on your Amazon link that you recommend a sprouted spelt flour. What do you bake with this?

      I use sprouted spelt to make bread at times when I want to take a break from wheat flour 🙂
