I am in love with this whipped chocolate ganache!
It has changed how I am going to make frosting from here on out. This recipe for whipped chocolate ganache is super quick and super easy to make. Smooth creamy and sweetly satisfying it spreads like a dream and can be piped with a piping bag.
It was a huge hit as the frosting for this Chocolate Mayonnaise Cake
- Serves: 18
- Calories: 181
- Fat: 20g
- Sodium: 208mg
- Fiber: 0g
- Cholesterol: 55mg
- 1 pound butter (cubed)
- 1 8 ounce bag THM Chocolate Chips
- place butter and chocolate chips into a microwave safe bowl and melt in 30 second increments. stir to combine well.
- refrigerate until hardened.
- With an electric mixer whip until smooth and creamy.

Would this work if I used dairy free butter? Also, does it taste buttery….thats a lot of butter with only the choc chips for sweetening? Just wondered 🙂

It should be just fine with that tweak, the butter is used to help the chocolate chips get creamy — it is like whippedd truffle filling

How hard does it get before you whip it? It seems butter and chocolate chips would get really hard in the fridge

I normally just let it thicken up and then whip it until it is creamy… you could add some heavy cream to it if you like (about 2-3 TBS)

This looks amazing, but I live in an area where sugar-free chocolate chips are not available and ordering by mail is also not an option. (Different country.) Will it work to make it with the THM Skinny Chocolate recipe? Would they have to be chips, or would a thin layer of chocolate frozen then broken up work? Also, would ordinary mayo work? Thanks!

Hi Susan,
Yes regular mayo will work perfectly in this recipe, as for the chocolate chips, you can use any 85% chocolate broken into pieces in place of the sugar free chips. I’ve never used skinny chocolate to make ganache so am not sure if it will work or not.

This cake was incredible!!! Unfortunately, I used salted butter in the frosting and it was way too salty for us. I will make a note to use unsalted next time!
