I am super pumped about these White Chocolate Macadamia Muffins!!
I love that these white Chocolate Chip Macadamia Muffins are able to be cooked in your air fryer or the microwave. There has been a national hunt for the new Bake Believe baking chips that will be available in Walmarts across the country August 1, 2019. I was lucky enough to find all three flavors at one of my local stores last week.

I started with a recipe that I thought was going to work and yeah that didn’t happen so back to the drawing board…
But my second and third tries came out AWESOME… YAY for not giving up!!
Baking in an Air Fryer Oven Tip
I tried a new trick with my Power Air Fryer Oven, where I flipped one of my racks that I had covered with foil to allow the muffins to cook without the heat blowing directly on them and only cooking the tops. And WOW!! it worked like a champ. I allowed the muffins to cook for about 12 minutes with the other rack protecting them and then took it out of the oven and let the tops rise and brown up to a beautiful golden brown.
I’ll be doing this with many more recipes in the future that’s for sure!
Using My Egg Bite Mold For Muffins
I love the ability to use my silicone egg bite mold to make muffin bites in my air fryers. I actually was able to pick up a set that have 4 wells which fit into my 3qt Nuwave Air Fryer or you can use any silicone muffin cups that you may already have.
Recipe For White Chocolate Macadamia Muffins
- Serves: 1
- Serving size: 3 muffin bites
- Calories: 368
- Fat: 32g
- Carbohydrates: 18g
- Sodium: 479mg
- Fiber: 15g
- Protein: 13g
- Cholesterol: 212mg
- 1 large egg
- 2 tablespoons water
- ½ teaspoon vanilla extract
- 1 tablespoon coconut oil (I used refined)
- ¼ cup THM Baking Blend
- 4 teaspoons THM Gentle Sweet w/o xylitol
- 1 pinch THM Mineral Salt
- ½ teaspoon baking powder
- 3 teaspoons macadamia nuts (chopped)
- 1 tablespoon White Chocolate Chips, Bake Believe
- In a small bowl beat egg with water and vanilla extract.
- Add the coconut oil and dry ingredients except nuts and chips. Stir to combine.
- Fold in the nuts and ½ of the chips (I reserved 12 chips to place on the top of my muffins after they had cooked.
- Spoon batter into oiled muffin pan (I used a silicone egg bites mold for the muffins pictured) It filled 3 holes and I filled the rest with 2 TBS of water in each.
- Cover 1 rack with foil, set aside.
- Place 1 rack into the lowest position in your oven, Put egg bit pan on rack.
- Place foil covered rack into the second position upside down so that the foil is shielding the egg bite mold.
- Bake at 320 degrees for 12 minutes and then remove the foiled tray so that the tops can brown slightly.
- Press reserved chips into the tops of your muffins and allow them too cool.
- Preheat to 320 degrees
- Place about ¼ - ½ cup of water into the drawer of your air fryer.
- Cover the egg bit mold with foil or make a tent to cover silicone muffin cups.
- Place muffin cups into the drawer and put the tent over them for the first 12 minutes of cooking.
- Remove the tent and allow to brown slightly.
- Mix everything in a large coffee mug and microwave on high for 1min 30 seconds.

What can I use in place of THM baking blend if you don’t have any?

you can use a frugal flour blend of 1/3 almond flour, 1/3 coconut flour and 1/3 golden flax meal 🙂
