So the other day, one of my lifelong friends posted about making some Faux Pineapple!
Oh did my mind start whirling about with that! Kathy You truly inspired this creation … Thank you!!
I would love to share her recipe with you however it isn’t friendly to those of us following Trim Healthy Mama, I had to tweak it to make it on plan.
She used Pineapple Juice and Splenda in this recipe from the USDA website. Which for those not following THM would probably work wonderfully.
However I’m trying not to spike my sugar with juices and I rarely use Splenda (unless I am cooking for those that will not/ cannot eat stevia, which Kath is one of those people)
So I swapped out the juice for some water…added my sweetener… added a bit of extract/flavoring and
YEP!!ย IT WORKED!!
Sugarless Faux Pineapple was born!
I can now make cakes and treats with something that tastes like pineapple without spiking my sugar and use cream cheese frosting to my heart’s content on those treats.
Can you say Hummingbird Cake!! Yeah Mama!!

I love my hot water canning basket, like this one. It fits into my dutch oven and allows me to can small amounts to meet our family’s needs with sugarless jams, jellies, canned fruits and vegetables. This basket also fits in my instant pot and works great as a steamer and to hold eggs, radishes and other vegetables and it’s got a built-in handle which make it really easy to use!!

WOW! This is a great idea. I can’t wait to try it. This also encourages me to experiment making “orange juice” for use in recipes;since juice is mostly water and “sugar” with a little bit of flavoring.
Kathy says
I am glad I could inspire you ๐
Judy says
Thank for commenting… Miss you lots!!
Brenda says
Can’t wait to try this…bang up job Judy and Kathy
Dianne says
May I ask the reason for letting it sit 24 hours? I would like to try it with smaller amounts.
Judy says
it gives the shreds a chance to absorb the pineapple flavor
Nan says
Do you think this would freeze well?
Judy says
That i don’t know, I have not tried it
Shari T says
This would be great for recipes calling for crushed pineapple. But could you just cut the zucchini into small dice for “pineapple” tidbits?
Shari T says
Just saw the end of the recipe and answered my own question. Duh! ๐ Thanks, I wouldn’t have ever thought of this for pineapple replacement!
Liza says
Which brand of pineapple extract did you use?
Judy says
I personally use Lor Ann oils for things like this but Watkins also has one.
Tami says
Thanks for this wonderful recipe, I am going to try it. I was wondering how it will settle if you are not using any gelatin?
Judy says
This is more like canned pineapple than a jam or jelly
Barbara says
My garden is done with zucchini. I have some in the freezer. Would it work for this faux pineapple?
Judy says
I’m not sure that it wold hold up to the canning after being frozen.
Joy says
Can you do this in the instant pot too?
Judy says
Hi Joy, Canning is not recommended in electric pressure cookers via the FDA. Personally, I haven’t canned in my IP and I have no plans to for this reason ๐
Kelley says
Wondering if you could use choyte squash? I am not a fan of zucchini squash. I have heard that the chayote squash is great substitute for apples in faux apple pie…
Judy says
yes you could!!!
I love Chayote and have a few recipes that use it in place of apples too ๐
