Low Carb Brown Sugar

October 16, 2016 by Judy 24 Comments

One thing that people seem to look for during the holidays is a Low Carb Brown Sugar Replacement.

This Low Carb Brown Sugar is part of my make ahead mixes series for Trim and Healthy pantry staples.

Brown sugar can’t be totally sugar-free as the molasses used to make it does contain natural sugar.

My baking during the holidays and all year make this is a staple ingredient in my Trim and Healthy Kitchen. Sadly none of the over the counter brown sugar replacements fit within THM guidelines so if you are using one of them it is off plan, so to speak.

I have hesitated to post this because I truly respect Gwen and her recipes, however I believe that my tweaks make this different enough to warrant its own post on my blog in an effort to fully share the ingredients and ratios that I am using.

This post about Baking with Sugar Alternatives from last year, explains why it does make a difference in the outcomes of your recipes when you change sweeteners, measurements, omit or include different extracts in your baking.

This great low carb brown sugar replacement makes a wonderful addition to your kitchen staples.

Ingredients
  • 1 cup Erythritol, Pyure Organic All Purpose Sweetener Blend, or THM Super Sweet Blend
  • 1 teaspoon Stevia extract
  • 1 teaspoon Blackstrap molasses
Instructions
  1. Place sweetener, stevia extract and blackstrap molasses in a bowl or jar. If using a jar place lid on securely and shake jar vigorously to mix in the molasses. You can also stir with a spoon or a fork to ensure that all the molasses is evenly mixed and you don't have any clumps.
  2. This sweetener replacement should be used based on the equivalents of Erythritol and stevia mixture which for me is ⅓ cup sweetener to replace 1 cup of sugar.

The Benefits of Making this Low Carb Brown Sugar

Making this ahead and keeping it on hand helps me stay on plan with my cooking and baking.

I don’t have to search for an ingredient or take the extra steps to make Low Carb Brown Sugar every time I want to make a recipe.

I have a readily available source of brown sugar when I need that caramel fix.

My Sugar Free Brown Sugar Tweaks

  • I use THM Super Sweet Blend, Non GMO Erythritol and Stevia Extract,  or Pyure All Purpose Stevia Sweetener Blend
    • Leave out the flavor extract

I love the Sugar Free Brown Sugar Recipe from Gwen’s Nest and used it in my THM journey but with these tweaks.

If you do use xylitol or find that you don’t prefer this blend please by all means check out Gwen’s!!

Why we limit our use of Xylitol

I don’t normally use xylitol because our fur baby Sprocket tries to snatch bites or lick up crumbs etc, so for his safety I only use Gentle sweet or Birch Xylitol when making caramel or from packets in my purse when traveling outside our home.

(Xylitol and any blend that contains it are toxic to household pets {dogs and cats})

Why we use Pyure over Truvia while following Trim Healthy Mama

I get asked a lot why I use The Pyure brand sweetener instead of Truvia. My answer is always the same

  • It costs less per serving
  • It is a Non GMO sweetener where as Truvia is a GMO sweetener
  • I had a reaction to truvia (skin rash) that I don’t have when using Pyure
  • It tastes better, what I call cleaner
  • It takes less than when using Truvia to obtain the same sweetness

I love my THM Super Sweet Blend it is by far my favorite sweetener and I try really hard to keep in in our home, but with blogging and baking for other family members I do use it when making treats for others. It is slightly less sweet than my beloved Super  Sweet Blend but is also sweeter than Gentle Sweet, so you kind of have to taste as you go when using it.

I especially love this when making THM chocolate chip cookies or cookie dough 🙂 I sometimes like to add a bit of maple flavoring as well.

Sadly, I can’t use maple in anything. My husband picks it out in the flavor profile and won’t eat it again.

I want to make this, can you clarify – if I’m using super sweet blend do I still add stevia? Or is that only when using erithriytol?

I would only add it if using erythritol 🙂 I normally just mix the molasses and super sweet together and am done 🙂

I am so happy to find a brown sugar recipe. I doubled it, 2 cups Erythritol, 2 tsp stevia, 2 tsp molasses. I tried mixing by hand, then shaking in a jar and finally in my mixer just to break it all up. It seems incorporated but it isn’t “brown”. Should it look like brown sugar? Mine is more white. I will still use it.

You could add a bit more molasses but be mindfull that it doesn’t get too dark 🙂

If it’s not totally sugar free why is there no sugar or carb listed in the breakdown? I’m new to keto cooking and trying to really restrict myself and track everything.

Lisa, I use a software program that figures out the nutritional values — meaning that while there may be natural sugar from the molasses it doesn’t show up because it is less than 1g per serving.

Crious why you say that every over the counter brown sugar sub is off plan… Lakanto Golden is nothing but Erythritol and Monkfruit. Wouldn’t that be a ready made, THM approved, brown sugar sub?

My husband and I cannot do Stevia, causes a bad allergic reaction. Would you suggest adding Xylitol (for those not concerned about furniture babies), or just up the Erythritol??

This post was written before anyone had found the Lakanto — And yes if someone could use xylitol if they don’t have pets 🙂

So excited to see that you use the super sweet with this! I have tried Gwens and I didn’t care for the erythritol maybe because it needed the added stevia…?
Well anyways you could also add her comment “bless your little heart” to any comments about the Trent tiny amount Of sugar that the black strap molasses adds. Lol thank you for all the awesome recipes!!
