I’ve been wanting to make a bunch of cookies lately, not sure why but hey, it makes for a really nice freezer stash! Grandma’s Almond Butter Cookies are a yummy addition to coffee and tea. They are a quick snack with some protein to help hold you over 3 hours if you are a Trim and Healthy Mama like me.
We all want some healthier options for the littles in our lives, for me that is my grandchildren. Almond flour is a good protein source although sadly there are a lot of people who are allergic to them. Luckily for me none of my grands are.
I can pack some of these to share with my 2-year-old grandson no problem and he always likes when Grandma Judy brings him treats. It saves me time and worry to share my treats with him when I am babysitting. I also pack us a healthy lunch so it’s a win win for everyone.
I used the new THM baking blend when making these, it really is convenient and saves a bunch of extra steps in recipes that’s for sure. The high quality of ingredients allows me to be comfortable serving these almond butter cookies to my family. If you don’t have the baking blend you can make these with the substitutions in the notes of the recipe.
These cookies are lighter in texture than most but they really fill the crunchy cookie craving that we all sometimes get. You can add 1 TBS of cocoa to the recipe to get a chocolate almond version if you’d like. Let me know if you do… I’d love to see photos on our Facebook Page .
Grandma’s Almond Butter cookies work well as sandwich cookies and with a little icing dribbled over them… if you use a Mini Whoopie Pan
like this one it helps keep them uniform in size and even numbers for those sandwich cookies or cookies and cream pops like the picture…

- 1 cup THM Baking Blend
- 1 Tablespoon sweetener, I used Pyure Organic Stevia All Purpose Sweetener
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 egg
- ¼ cup butter, at room temperature
- ¼ cup almond butter
- 1 teaspoon vanilla extract
- ½ cup of oat fiber
- ¼ cup almond flour
- 2 TBS coconut flour
- 1 TBS gelatin
- 1-2 TBS almond milk
- Preheat oven to 325.
- Cream butter, Almond butter and sweetener. Add egg and vanilla extract
- Add baking blend, baking powder and baking soda , mix to combine
- Drop by rounded teaspoon on baking sheet and bake for 6-8 minutes.

Sounds great, but haven’t been able to get the baking blend yet. I don’t see the substitution. Also, what is almond butter? Thanks!

I’m am sorry I did corrected my error for the substitutions. Almond butter is almonds that have been ground into a paste similar to peanut butter.
