We really like this Bacon & White Cheddar Mashed Cauliflower.
My husband wasn’t overly fond of mashed cauliflower until I started making this version of his favorite mashed potatoes. We really can’t eat white potatoes anymore becuase of being diabetic. Which really had him bummed until he had some of these.

So many families struggle with picky eaters, I know we did when my kids were young. I had one that wouldn’t eat cooked vegetables of any sort and one that wouldn’t eat chicken on the bone. I can relate to mama’s that face that struggle day in and day out and I just want to hug you.
Bacon & White Cheddar Mashed Cauliflower
This is a super simple recipe that can be made with No Special Ingredients but I’d like to just say that the sunflower lecithin really helps it all come together in a way that can pass as mashed potatoes.
Due to the fat content in the butter, bacon and lecithin this recipe falls into the Satisfying category for those following a Trim Helathy Mama Lifestyle

You can serve it as a side dish just like mashed potaotes

Why You Should Add Sunflower Lecithin
Lecithin is a really cool ingredient, it helps water and oil come together into a creamy texture that you can’t get to without it.
I add it to my “not so skinny” chocolate to help the cream emulsify with the cocoa butter and it just melts in your mouth. I add it to homemade almond milk for the same reason.
It is a wonderful brain food and can really help with cognition and ensuring that your body is getting all the right nutrients to your brain cells. And for us older mama’s that is important. I worry about dementia and alzhiemer’s due to my family history and my husband’s so adding a bit of sunflower lechithin here and there helps ease my mind.
Dawn over at Oh Sweet Mercy is who first added it to her Mashed Fauxtatoes and after trying them, I’ve added it to mine ever since.
How I Make Bacon & White Cheddar Mashed Cauliflower
Ingredients:
1 pound cauliflower flowerets, steamed and squeazed
2 tablespoons butter
1 teaspoon THM Simply Sunflower Lechithin, optional, but makes it creamy
4 ounces cheddar cheese, shredded
2 ounces cooked bacon, crumbled
Directions:
1. Steam Cauliflower and squeeze excess moisture from it.
2. Add butter and Sunflower lecithin mash until smooth. I use my blender for this.
3. Stir in white cheddar and bacon bits.
