We love these breaded mushrooms made in the air fryer. They are a wonderful snack that I can pair with any lean protein for a healthy snack, lunch or dinner.

How I Make These Breaded Mushrooms
There are a few trick to making these breaded mushrooms. I have found that when I whip my egg whites with a small amount of xanthan gum they hold the air that has been whipped into them a bit better than without it. Adding a small amount of THM Baking Blend and some seasonings bumps up the flavor of the batter and breading.
You can use this Hubby Lovin’ Seasoning Mix as an alternative breading with mushrooms, onion rings and other breaded and air fried vegetables.

I have tested this using aquafaba as an egg replacement and it worked exactly like the ones using the egg white. If you use a different egg replacement I would love to hear your results.
Preheating The Air Fryer
I always recommend preheating your air fryer. In my experience with the various models of air fryers that I have used, preheating your fryer gives you the best results. Sure it will work if you don’t but the cooking times will vary greatly depending on the size and style of your air fryer.

Air Fryer Breaded Mushrooms Recipe
- Serves: 3
- Serving size: 5 pieces

- 8 ounces mushrooms, whole
- ¼ cup THM Baking Blend
- ¼ cup Parmesan cheese topping, fat free (or Nutritional Yeast)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon THM Mineral Salt
- ¼ teaspoon ground black pepper
- ¼ cup egg whites
- ⅛ teaspoon xanthan gum
- 2 Tablespoons THM Baking Blend
- 1 Tablespoon water
- Clean your mushrooms.
- Combine all ingredients into a small bowl and whisk to combine.
- Froth your egg whites and the xanthan gum until double in volume and soft peaks are forming.
- Fold baking blend into the egg white mixture. Try to keep the as much of the air in the mixture as possible.
- Stir water into mixture until just combined.
- Dip mushrooms one at a time into the batter mixture and then into the breading mixture and toss gently to coat. Place on a parchment lined plate or sheet and set aside.
- Preheat your Air Fryer to 400 degrees F.
- Spritz mushrooms lightly with oil and place into your air fryer basket.
- Air fry for 10 minutes, flipping or turning your mushrooms at the 5 minute mark.
Replace the egg whites with ¼ cup aquafaba (the juice from a can of garbanzo beans) and whip them to soft peaks with the xanthan gum.
