These super easy Cheesy Chicken & Asparagus Bundles are a great way to take advantage of asparagus in the spring. We love when asparagus is on sale in the spring. It makes for a quick and easy non starchy side to chicken and fish.
Rick always points out wild asparagus that is growing on the side of the road when we go for a drive in the springtime.

Cheesy Chicken & Asparagus Bundles can be made in your oven or your air fryer. I have included instructions for both.
As you may know I love my air fryer oven and have been pumping out recipes for it lately. I do however recognize that many mama’s do not have one YET so to keep it real I included both cooking times.
Making Cheesy Chicken & Asparagus Bundles In Your Air Fryer
One of the biggest tips I can share with you is to use Homemade Perforated Parchment Sheets when making these.
The perforated parchment sheets make cleaning your air fryer so much easier. You can check out the blog post about how to make them that is linked above.
Cheesy Chicken & Asparagus Bundles Recipe
- Serves: 2
- Serving size: 1 bundle
- Calories: 355
- Fat: 10g
- Carbohydrates: 4g
- Sodium: 267mg
- Fiber: 1g
- Protein: 60g
- Cholesterol: 157mg
- 2 8 ounce skinless boneless chicken breast (butterflied)
- 1 teaspoon italian seasoning
- ½ pound asparagus spears (fresh or frozen)
- ½ cup mozzarella cheese (shredded)
- Butterfly each chicken breast. Season with itialian seasoning.
- Tuck Asparagus into the chicken, folding 1 side over on top of the asparagus
- Place on a parchment lined baking sheet.
- Bake at 350 for 20 minutes.
- Sprinkle with the cheese are broil until brown.
- Place on parchment lined rack or basket
- Air Fry at 350 for 20 minutes, Flipping at 10 minutes
- Sprinkle with cheese and allow to melt in the warm Air fryer for 5 minutes. Or cook for an additional 2-3 minutes until the cheese is browned and bubbly.
