We love this creamy cucumber and onion salad as a side dish. It is super budget friendly and brings back memories of family cookouts and potluck dinners.

- Greek Yogurt or Sour Cream
- dried or fresh dill
- salt & pepper

- 2 cucumbers (peeled and sliced thin)
- 1 medium onion (cut in ½ and sliced ⅛" thick)
- 1 teaspoon THM Himalayan High Mineral Salt
- 1 teaspoon Simple Sweetener Blend(or THM Gentle Sweet)
- 1 Tablespoon apple cider vinegar
- ¾ cup mayonnaise (homemade mayonnaise)
- ½ cup Greek yogurt, nonfat
- 2 teaspoons dried dill (or 1 TBS Fresh dill)
- Slice your cucumbers and onions into a large mixing bowl.
- Sprinkle the salt and sweetener blend over the sliced vegetables. Add the apple cider vinegar and toss lightly.
- Allow this mixture to sit for about 15 minutes and then drain off the excess liquid.
- Fold mayonnaise, greek yogurt and dried dill to coat the sliced vegetables and add additional salt and pepper to taste.
