This classic creamy cucumber & onion salad is a great side dish that is easy to make and a family favorite recipe.

We love this creamy cucumber and onion salad as a side dish. It is super budget friendly and brings back memories of family cookouts and potluck dinners.

What You Need

    • 2 large cucumbers
    • 1 medium onion
    • Mayonnaise 
    • Greek Yogurt or Sour Cream
    • dried or fresh dill
    • salt & pepper

About the Ingredients

You can use whichever variety of cucumbers that your family prefers. I typically peel ours, but you don’t have to.

This classic creamy cucumber and onion salad is a great side dish that is easy to make and a family favorite recipe.
Ingredients
  • 2 cucumbers (peeled and sliced thin)
  • 1 medium onion (cut in ½ and sliced ⅛" thick)
  • 1 teaspoon THM Himalayan High Mineral Salt
  • 1 teaspoon Simple Sweetener Blend(or THM Gentle Sweet)
  • 1 Tablespoon apple cider vinegar
  • ¾ cup mayonnaise (homemade mayonnaise)
  • ½ cup Greek yogurt, nonfat
  • 2 teaspoons dried dill (or 1 TBS Fresh dill)
salt and pepper to taste
Instructions
  1. Slice your cucumbers and onions into a large mixing bowl.
  2. Sprinkle the salt and sweetener blend over the sliced vegetables. Add the apple cider vinegar and toss lightly.
  3. Allow this mixture to sit for about 15 minutes and then drain off the excess liquid.
  4. Fold mayonnaise, greek yogurt and dried dill to coat the sliced vegetables and add additional salt and pepper to taste.
