My boys always loved having french toast sticks for breakfast. They were quick and easy, but probably not very healthy.
I enjoyed making this on plan version of our family favorite! And what a bonus they are gluten free, sugar free, low carb and low fat.

For our family breakfast was always a rush against the clock with everyone getting ready for the day. So anything quick and easy would be our “go-to”.
This french toast sticks recipe is another adaptation of the WWBB for 1 from Trim Healthy Mama’s: Trim Healthy Table. Did you see the French Bread Pizza recipe I posted yesterday? It’s a keeper for sure!
What You Need To Make These French Toast Sticks
Trim Healthy Ingredients
- THM Baking Blend or a homemade blend like this
- Pristine Whey Protein Powder or another on plan protein powder
- THM Super Sweet Blend or you can use your favorite sweetener using the conversion chart located here.
Kitchen Tools
The batter for these is pretty loose so you are going to need something to form them in. I used this silicone bread stick mold.
But you could also use silicone ice tube trays. Or use a metal mason jar ring flipped upside down and lined with parchment paper.
Using your milk frother to whisk the egg whites with the xanthum and yogurt helps give a small recipe like this one lift. Alternatively, you can whisk by hand but yeah try the frother trick!
How To Enjoy French Toast Sticks on Your Trim Healthy Mama Journey
Because these french toast sticks are a Fuel Pull meal when following the Trim Healthy Mama Plan, you may want to pair them with a steaming cup of collagen tea or coffee.
Make sure you are getting in some non starchy veggies as much as possible in your journey.
Air Fryer Tip For Baking These French Toast Sticks
Normally, when I bake breads or anything else in my air fryer, I try to divert some of the heat blast away from the top (so it doesn’t burn).
You can do this one of two ways:
- Covering your pan with foil
- Or by covering with parchment paper and then inverting a rack over the top of the paper to hold it from blowing up into the heat element. (my favorite way)
French Toast Sticks Recipe
- Serves: 1
- Serving size: 1 batch
- Calories: 106
- Fat: 2g
- Carbohydrates: 10g
- Sodium: 816mg
- Fiber: 6g
- Protein: 15g
- Cholesterol: 3mg
- ¼ cup egg whites
- 2 tablespoons 0% greek yogurt
- ½ teaspoon vanilla extract
- ⅛ teaspoon xanthan gum
- 1½ teaspoons THM Pristine Whey Protein
- 2 Tablespoons THM Baking Blend
- 3 pinches THM Mineral Salt
- ½ teaspoon baking powder
- 1 teaspoon THM Super Sweet Blend
- ¼ teaspoon ground cinnamon
- Preheat oven or air fryer to 350 degrees.
- In a medium bowl, combine whey, baking blend, baking powder, mineral salt, sweetener and cinnamon.
- In a measuring cup whisk egg white, vanilla extract, xanthan gum and greek yogurt until it foams up (mine reached a full 1 cup measurement using my frother)
- Stir the wet into the dry trying not to knock the air out of the egg whites.
- Spray pans with cooking spray and fill each hole about ½ full
- Place pans into the oven or air fryer (cover pans in the air fryer so they don't burn on top, see my notes in article on how to do this). Bake for 8-12 minutes.
- Sprinkle finished sticks with sweetener & cinnamon.
- Allow to rest for a couple minutes before serving. Enjoy!!
Add some yogurt and berries or cut up fruit for the kids.

These are amazing! I didn’t have a mold, and I tried whisking the egg mix but it didn’t whisk well (I don’t have a frother), so my “sticks” look like flat slurms, but they have great flavor.

oh gosh I’m sorry they look funky! But you could actually make them in a metal mason jar ring, just flip it upside down and line it with parchment paper.
