Homemade Sugarless Ice Cream Cones

I love eating my ice cream from a sugar cone, it brings back fond memories of my childhood and making homemade ice cream with my grandmas.
I can’t tell you how happy I am that these homemade sugarless ice cream cones finally came out for me!! After 4 plus years of following the Trim Healthy Mama Plan we have ice cream cones that are on plan.

I have been working on this recipe for over a month tweeking and tweeking until they came out just right. I was almost getting a complex, but I stopped and reviewed what had already worked kind of and what hadn’t.

I went searching and searching to see what I could find that might be tweakable…

I do need to give credit where credit is due and say thank you to Carolyn over at All Day I Dream About Food because I based this on her Pizzelle recipe. Some ingredients are slightly different, because I follow the Trim Healthy Mama Plan and not Keto.

What You Need To Make Sugarless Ice Cream Cones

Let me just say that the first ingredient and one that is not listed is patience. This recipe is a bit of a process when you first start out, but becomes a lot funner as you get through the process.

I picked up this awesome waffle cone maker and got set to make ice cream cones that were on plan for being Trim and Healthy. I really like this waffle cone maker and the tools for making cones or waffle cups.

It does take a bit of time to process through all of the batter for these, so give yourself time and enjoy the process, especially if you have little ones. You are making memories mama with healthy treats!!

Tip #1 Let the Iron preheat

Tip #2 Place your batter just above the center as it pushes outward when you close the lid

Tip #3 Only use 2-3 Tablespoons per cone — less is more here

Tip #4 Enjoy the Journey!!

Tip #5 Allow Your Cones to cool overnight so they crisp up

I had a bit of trouble with some of my cones not sealing properly, so ugh yeah I just had to melt some on plan chocolate to seal my cones up so they wouldn’t leak all over… (wink) 

I guess I’ll just have to suffer through eating chocolate with my ice cream cones.

Sugarless ice Cream Cones so that you can indulge your inner child while staying on plan with Trim Healthy Mama.
Ingredients
  • 4 ounces Neufchatel cheese (room temperature)
  • 4 large eggs (room temperature)
  • ¼ cup unsweetened almond milk
  • 2 teaspoons vanilla extract
  • ¼ cup THM Super Sweet Blend
  • 1 cup blanched almond flour
  • ¼ cup coconut flour
Instructions
  1. Place all ingredients into your blender or food processor and blend to combine.
  2. Preheat waffle cone maker.
  3. When the light comes on, place ⅛th cup (2 TBS) of batter just above center of the plate and lower the lid.
  4. Cook for 20-30 seconds. My cone maker has a light that indicates when it is done... but you may want to chck for doneness a bit sooner.
  5. Carefully lift the disc from waffle cone maker and wrap around the cone form, pressing slightly on the edge to seal. Allow to cool on the form while cooking the next cone.
  6. Allow cones to sit overnight uncovered so that they harden.
  7. Dip the points in melted chocolate to stop drips. You may also need to seal the edges of your cones with chocolate if they do not seal during cooling.

    Thank you! My husband got me a waffle cone maker for Christmas, even though I was following THM. We’ve only used it twice cecause I didn’t want to eat sugar. I’m going to try this recipe this weekend!

      Kathy, honestly I would call it an S — the almond flour. I know that numbers wise it is close to a FP but you really do not want to mix the almond flour with E fuels and it is a bit high for the Fat content 🙂
