Mediterranean Celery Salad

This Mediterranean celery salad is a light and refreshing addition to any cook out. It is great with grilled meats, fish and even along side chicken wings.

Mediterranean Celery Salad Low Carb, Low Fat

This Mediterranean Celery Salad is a great side at any cookout. It is light and refreshing on those hot summer days and nights.

It is a filling side that is simple to make, healthy and super budget friendly.

The Fun Facts about Celery Salad

  • It is a great side with a larger meal as it doesn’t add a ton of fat or carbs to your meal
  • It is super budget friendly without a bunch of special ingredients
  • It comes together quickly
  • You can use different cheeses, such as Shaved Parmesan or Blue Cheese (this is a bit higher in fat)
  • You can add more vegetables like thin sliced onions and/ or carrots in place of some of the celery

All About Celery

Celery is one of those vegetables that doesn’t get much of a spotlight. Topically it is thought of when you are making soups and stews. 

But did you know that it is a really neat non starchy vegetable that can be enjoyed in simple ways that bring its unique health benefits into your everyday meals and snacks?

Why is Celery Healthy?

Lets take a look at what some of the health benefits of celery are:

    • it is low in calories, but high in fiber
    • a good source of vitamins A, C and K, folate, potassium and antioxidants like beta-carotene and flavonoids. 
    • it potentially helps to regulate blood pressure
    • supports healthy digestion
    • and aids in weight loss/management due to the high fiber content
    • it helps to reduce inflammation

  1. As aside with Grilled Tuna Steaks
  2. Paired with Chicken Wings
  3. Add a small Packet of canned tuna in water
  4. Alongside Ribs prepared with my Sweet and Spicy Sugar Free BBQ Sauce

Ingredients
  • 4 cups celery (sliced thin)
  • ½ cup Athenos Fat Free Traditional Feta Crumbled Cheese
  • ¼ cup chopped walnuts (optional)
  • ¼ cup parsley (chopped)
  • 2 Tablespoons lemon juice (fresh or bottled)
  • 3 Tablespoons extra virgin olive oil
  • ½ teaspoon French's Dijon Stone Ground Mustard
  • ½ teaspoon honey (optional)
salt & black pepper to taste
Instructions
Prepare the Celery:
  1. Wash and slice the celery into thin bite size pieces.
Make the Dressing:
  1. In a small Bowl, whisk together the lemon juice, olive oil, Dijon Mustard, honey(if using) salt and black pepper.
  2. Set aside
Combine the Ingredients:
  1. In a large bowl, toss the celery, feta cheese, walnuts (if using) and the parsley.
Dress the Salad:
  1. Drizzle the dressing the celery mixture and toss until evenly coated.
Serving & Storage:
  1. You can serve this salad immediately, however allowing it to sit and chill for 10 minutes will enhance the flavors.
  2. This Celery salad can be stored in the refrigerator for about 5 days.
