I love having this Mediterranean Spice Blend on hand, especially during grilling season. This spice blend can be used with any protein source in your Trim Healthy Mama Journey and is great sprinkled on vegetables and dips. Similar to Za’atar.

Mediterranean dishes are really flavorful and use traditional herbs and spices. Blending these spices together at home allows you to control the addition of anti caking agents and other “off plan” ingredients.
How I Use Mediterranean Spice Blend
Personally we love seasoning chunks of bonless chicken breast with this spice blend and adding some of my Homemade Seasoning Blend to the skillet.
Toss with 1 TBS of good Extra Virgin Olive Oil and 1 TBS of THM MCT Oil along with a can of diced tomatoes.
In about 30 minutes you have an amazing skillet dinner that can be served with homemade pasta from this Low Carb Homemade Pasta Dough, zoodles or the ever popular Low Carb Noodle Mix.
You can also add the chicken to this Mediterranean Barley Salad for a wonderfully healthy and energizing meal.
We keep cooked chicken chunks like this in the freezer to easily add them to salads and such.
About Sumac
One of the main ingredients of this Mediterranean Spice Blend is sumac. I had a difficult time finding it at the local grocery stores until I went to our ethnic market. Some sumac comes pre blended with salt so watch your ingredients if you can find it or order it online.
If you really can not find sumac then you can use lemon pepper seasoning in the same amounts, it won’t quite be the same but it does have a similar flavor profile.
Transforming Mediterranean Spice Blend into Za’atar
This simple blend can be transformed into Za’atar just by adding toasted sesame seeds into the mix, it does change the fat content but not by enough for it to affect your recipes.
You can also buy Za’atar online. Not all grocery stores carry it, but if you have an international market it will typically be in the Middle Eastern foods section.
Mediterranean Spice Blend As A Marinade
To make a Mediterranean Spiced Marinade
Just mix these ingredients together (this is enough for 4 chicken breasts)
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1/4 cup Mediterranean Spice Blend
- 4 cloves garlic minced
- 2 teaspoons THM Mineral salt
- 1 teaspoon pepper
Place into a glass dish or ziptop bag and move the chicken around until well coated. Allow to marinate for 30 minutes up to 24 hours.

- 2 tsp ground sage
- 2 tsp dried thyme
- 2 tsp ground black pepper
- 2 tsp sumac*
- 1 tsp THM Mineral Salt
- 1 tsp garlic powder
- 1 tsp dried rosemary (crushed)
- Combine all ingredients and store in a labled airtight container.
