Sheet Pan Shrimp Creole is quick and easy to prepare, with healthy ingredients it has become one of our go to meals when time is of the essence.
Being lower in fat than many sheet pan meals this Shrimp Creole packs a lot of flavor in simple ingredients reminiscent of a classic southern gumbo. Even my okra hating husband was eating this meal without an issue.

How this Sheet Pan Shrimp Creole is Healthier
This sheet pan shrimp creole is a healthier meal because it is lower in fat than many other meals, and still satisfies your tummy.
Okra is a wonderful addition to fuel your body and as it is roasted in this Sheet Pan Shrimp Creole it doesn’t have the slime factor that turns so many people away from this amazing vegetable.

Ingredients
- 2 Tablespoons coconut oil (melted and cooled)
- 2 Tablespoons THM Baking Blend (or this homemade version)
- 10 ounces okra pods (sliced lengthwise, I used fresh)
- 1 large red bell pepper (halved)
- 1 teaspoon Creole seasoning (I like to use this one from Nana’s Little Kitchen)
- 8 ounces large shrimp (peeled and deveined)
Instructions
- Preheat broiler to high with rack set 6″ from heat. Line a baking sheet with foil and spray with coconut oil spray. Slice Okra Pods lengthwise and coat with 1 TBS of oil. Toss with THM Baking Blend. Place okra and bell pepper skin side up on baking sheet and broil for 10 minutes. Wrap pepper in foil and allow to rest for 10 minutes. Peel and chop pepper. remove from baking sheet and keep warm.
- Combine 1 Tbs of oil with creole seasoning and coat shrimp within a medium bowl. move okra to each side of foil lined baking sheet and broil shrimp for 10 min on each side or until no longer pink. Garnish platter with roasted peppers.
