This spiced peach preserves are going to make life so much easier. They are sugar free and canned in a hot water bath to preserve them for months to come.
I was excited to find pectin that does not contain off plan ingredients and happy to be able to make our family favorite jams, jellies and preserves again.

Why We Love Sugarless Spiced Peach Preserves
I really enjoy the slightly spicy kick that this recipe gives. If you don;t care for the spice you can omit the ginger and have a classic peach preserves recipe that can be processed in a hot water bath canning system.
When my boys were younger we would buy a bushel of peaches during the Peach festival in Romeo Michigan. I would bring them home and make all kinds of pies, jello salads and more with them.
Because we were on a really tight budget I also started making peach preserves to give as gifts. My family has always loved receiving these kinds of gifts and they really saved me on time, stress and money.
About The Jars
I normally use a variety of jelly jars when making preserves and jams. Most of my batches are smaller because we have a small family and in all honesty we do not use preserves and jams in a way that warrants making larger batches.
I love decorative jars like these 8 ounce jelly jars from Ball just because it makes gifting a bit more fun. I also use these 8 oz jars because I can also use them to make fruit on the bottom or blended yogurt cups with my Homemade Greek Yogurt,
How I Use Spiced Peach Preserves
I love using spiced peach preserves in a variety of ways in my Trim Healthy Mama Journey.
I top my sprouted toast with a wedge of light laughing cow or cottage cheese and add 1-2 Tablespoons of these preserves for a quick and easy energizing breakfast or snack.
We also swirl preserves like this into a serving of 0% Greek yogurt with a slice of sprouted toast for another great E meal.
I also love to make fruit on the bottom yogurt cups with my preserves and jams.
Some Notes About Pectin
One of the biggest obstacles for canning jams jellies and preserves that are on plan for the Trim Healthy Mama plan is that most fruit pectin that is readily available contains off plan ingredients like dextrin and sugar.
I have only found 1 brand that does not contain these ingredients, which is Pomona’s Universal Pectin which works a bit differently than sure gel and Certo.
It seems a bit pricier than the other brands however each box makes multiple recipes which brings the cost per batch down to around the same amount as the off plan ones. So yes, buy Pomona’s Universal Pectin if you can find it.
Using Gelatin
I do also use THM Just Gelatin when I am making freezer jams, jellies and preserves like these Sugar Free Peach Preserves or this Simply Scrumptious Ginger Marmalade. (I have not processed these in a hot water bath canning system, but if you do and have success I would sure love to hear about it!! )
My Favorite Hot Water Bath Canning System
I go old school when it comes to hot water bath canning. I use a 12qt hot water bath canner that Rick got me for my birthday a couple years ago.
Using Your Instant Pot As A Canner
I know that some sites say that you can use your instant pot as a canner; however after a whole lot of research I am not comfortable using that method at this time.
I have heard that Instant Pot is working on a new pot that will have canning settings but I like to wait a bit and see reviews and allow for adjustments before making a larger purchase like that.
So please make sure you do your research because at this time the FDA does not recommend canning in an electric pressure cooker. Although you can sterilize your jars in there.
Spiced Peach Preserves Recipe
- Serves: 32
- Serving size: 2 TBS
- Calories: 14
- Carbohydrates: 4g
- Sodium: 1mg
- Fiber: 1g
- Cholesterol: 0mg
- 2¾ pounds peaches (skinned and chopped)
- ¼ cup water
- ¼ cup lemon juice, bottled
- 3½ teaspoons calcium water
- ¼ cup THM Super Sweet Blend
- 2½ teaspoons Pomona's Pectin Powder
- 1 teaspoon ground ginger
- 2 teaspoons THM Baobab Boost Powder
- Prepare calcium water:
- Place ½ cup water into a small jar, add 2 teaspoons of calcium powder to water. place lid on jar and shake until dissolved. Set aside.*
- Prepare your jars lids and bands.
- Sterilize jars and heat up your canner.
- Rinse and prepare peaches by skinning, putting and chopping into uniform pieces.
- Add prepared peaches to a medium sauce pan with ¼ cup water.
- Bring to a boil, Stirring occasionally.
- Cook for 3 to 5 minutes allowing fruit to soften but still old it's shape. Remove from heat.
- Measure 4 cups of mixture and return it to the saucepan (Reserve any extra for another use*)
- Add lemon juice and calcium water to mixture and stir to combine.
- In a separate bowl combine sweetener, pectin powder, ginger and baobab powder -- mix well and set aside.
- Bring mixture to a full boil, and slowly add pectin mixture, stirring constantly. Bring mixture to a full boil stirring vigorously for 1-2 minutes or until the pectin is dissolved.
- When mixture reaches a full boil remove from heat.
- Lade hot preserves into hot jars, leaving ¼ inch headspace.
- Remove trapped air bubbles, wipe jar rims to ensure there is nothing on the rim.
- Place lid on jar and screw band into place until finger tight.
- Lower jars into canner ensuring that they are not touching. Make sure that you have 1-2 inches of water above the jar lids. Place lid on canner and return to a roiling boil.
- Process your preserves for 10 minutes then turn off the heat. allow the canner to sit covered for 5 minutes before removing jars from the water.
- Remove jars and allow to cool at room temperature for 12-24 hours. Check that jars have sealed and store properly.

the calcium water activates the pectin so that it will gel.

Is it really 2 tsp calcium powder to 1/2 C water? The Pomona site says 1/2 tsp to 1/2 C water.

it is the 1/2 tsp calcium powder to the 1/2 c water when you make the calcium water — then the calcium water is used in the larger amounts.
