Stevia Sweetened Chocolate Chips

Sometimes it’s easier and better to make your own stevia sweetened chocolate chips than to rely on the options at the grocery store. Personally I can’t justify spending over $8 on a bag of chocolate chips when baking for friends and family and the other options well let’s just chalk that up to I just can’t do it.

Malitol does horrible things to my tummy and to many others… so by making these little gems it makes desserts just a little sweeter knowing that it isn’t going to tear up my tummy.Disclosure Statement

 

I’ve used these wonderful stevia sweetened chocolate chips for over a year while following Trim Healthy Mama, and let me tell you it has saved us a lot of money as well as time hunting down Lily’s.

I use regular bakers chocolate like this.  You can normally find it in any local grocery store, and it works wonderfully for this recipe as well as many others!

I also use a Coffee and Spice grinder that fits on my Ninja Auto IQ Compact System which has been a lifesaver in my small kitchen.

 

When I make chocolate I use refined coconut oil, I know that unrefined is healthier, however coconut flavor in my chocolate is something I don’t really care for.

Since I started making these I have made a variety of different style baking chips.

I picked up some chocolate chip molds from Amazon and love how they come out!

Stevia Sweetened Chocolate Chips

Ingredients
  • 4 oz Unsweetened Bakers Chocolate
  • 1 TBS coconut oil
  • 1 tsp vanilla extract
  • 3 TBS powdered THM Super Sweet Blend, I do this in my ninja coffee grinder attachment (or you can use ½ cup +1 TBS of THM Gentle Sweet)
Instructions
  1. Melt bakers chocolate, remove from heat.
  2. Add Powdered Sweetener , Stir
  3. Add vanilla and stir some more.
  4. Add Coconut oil if needed to thin for pouring.
  5. Pour into mold and freeze until hard.
  6. Store in freezer.
