This super simple “no mato” sauce is a great way to replace traditional tomato sauce in recipes and to increase the vegetables in your daily meals.

When my children were much younger I struggled with how to add a larger variety of vegetables into our family meals.
Two of my boys never really had an issue with trying new things, but I have that one child that really struggled, which is where some of the inspiration for this recipe came from.
Because, yes, I really do understand the struggles of a mom (or dad) with a picky eater or two. And for those that struggle with food allergies, my heart goes out to you. This recipe is dedicated to everyone in those situations.
What I Use To Make This Super Simple No Mato Sauce
1 can of sliced beets {15 oz}
A can of sliced carrots {15 oz}
1 TBS Kalamata Olives, pitted (you can use any type of olives, these are my personal preference)
An immersion or stick blender like this one
A small sauce pan, so I can cook it down a bit before adding any spices or seasonings to it.

Can You Use Fresh Vegetables?
You sure can.
Use about half a pound each of fresh beets and fresh carrots prepared in your preferred cooking method.
The Air Fryer Method
Using the air fryer adds a depth of flavor with freshly roasted beets and carrots from my air fryer.
I will be posting about how I roast these vegetables and others in my air fryer in a few days.
The Instant Pot Method
You can also steam them in an instant pot and make the sauce directly in the liner. I love this post from Natasha’s Kitchen because it shows the times for a variety of size beets.
Adding a Variety of Vegetables
One of the best things about this recipe is that you can add a variety of vegetables either as part of the puree or chunked up to add texture to your sauce.
Simple No Mato Sauce is a wonderful alternative to traditional tomato sauce for those that are allergic to night shades or struggle with the natural acidity in tomatoes.

I love using this super simple sauce to make homemade pizza sauce, spaghetti sauce, taco sauce, BBQ Sauce, homemade catsup and many more.
How to store this Super Simple No Mato Sauce

- Freeze in desired portions for up to 6 months
- Place in a glass jar in your refrigerator (it will stain plastic)

- 15 ounces canned beets (drained)
- 15 ounces canned carrots (drained)
- 1 Tablespoon kalamata olives (drained)
- Add all ingredients to a small sauce pan or mixing bowl, blend until smooth with a stick blender.
