One thing I have learned on my THM Journey is that this week tends to be one of planning and preparation for the new year. Many of us re-read our Trim Healthy Mama books, set New Goals, Face New Challenges or begin a New Journey.

Thank you for this website! I have a recipe question- I am not getting crunchy results from the Peanut Butter Crunch.Will cooking a couple of minutes longer help? I have made this twice and love the taste.

it’s a crispy texture but kind of light because of the oat fiber and whey… and yes cooking it a bit longer will help it crisp up a bit more as it cools.

Interesting, the recipe I have does not list oat fiber! It has: peanut flour, whey protein, salt, baking soda, sweetener and coconut oil.

I’m sorry … I misspoke — the recipe you have is correct — I make others that replace the peanut flour with oat fiber — it will get crispy if you bake it a bit longer — I normally let it sit and cool a bit before I stir it to get the crumbles. It is quite “soft” when it comes out of the oven.
