With summer in full swing and the heat beating down upon us over here in Northern Illinois, USA… I find myself wanting a fudge-sicle…But we know those sugar filled sweet treats that the ice cream man sells just aren’t part of my healthy way of eating. So I mixed up a batch of Chocolate Custard, similar to the Vanilla Custard Shake I posted recently… and poured it into my Popsicle molds… TA DAHHH Sugar Free Chocolate Custard Pops.

Many of us following Trim Healthy Mama are looking for ways to stretch our special ingredients, because some of them can get a little pricey.
Simple treats that use ingredients that can be found everyday in the grocery store are a huge bonus and the kids/grand-kids will love these.
I got my Popsicle molds from the dollar store…
(not the best source, but hey we do what we can afford at the time.)
but these would be awesome for my birthday next month…
My vegetable glycerine from walmart (in the pharmacy) and everything else from the grocery store.

I’m going to go into a little detail about vegetable glycerine.
It is not approved as a sweetener on the Trim Healthy Mama plan, but it can be used in moderation with recipes like this.
The main reason that it is not a sweetener of choice is that cup for cup in contains MORE calories than table sugar !! But when using it in smaller amounts it lends creaminess to ice cream and puddings. We just need to be mindful of how much we are using and not overdo it.
I did dip a few of these in 1/4 cup lily’s chips melted with 2 TBS of coconut oil.
Sugar Free Chocolate Custard Pops Recipe
- Serves: 9
- Serving size: 9
- Calories: 67
- Fat: 5g
- Saturated fat: 3g
- Unsaturated fat: 1g
- Carbohydrates: 2g
- Sugar: 1g
- Sodium: 136mg
- Protein: 5g
- Cholesterol: 32mg
- two scrambled eggs in coconut oil
- ½ cup of almond milk
- 1cup 1% cottage cheese
- 2 TBS Cocoa Powder
- 1 TBS THM Super Sweet Blend (2 TBS THM Gentle Sweet) or to taste
- 1 TBS vegetable glycerine, optional
- a dash of salt
- A dash of vanilla and
- 2 tablespoons of coconut oil, melted
- add everything except the melted coconut oil to your blender.
- Process until smooth
- Drizzle melted coconut oil into blender as it is mixing to emulsify.
- Pour into Popsicle molds and freeze for 2 hours

Yes cooked scrambled eggs, I used about 2 tsp to1 TBS to scramble mine… enough so they don’t stick 🙂
