Air Fried Guacamole Bites

I am in love with these air fried guacamole bites. They were super easy to make and keep so well in my fridge. Rick is not a huge fan of guacamole so I get to keep these for me. They would make a great appetizer or party food if you are going to be watching football this Sunday with friends.

I know when my boys are around they love finger foods like these guacamole bites because they are super fun and hit the spot when you are not quite paying attention to your food.

Air Fried Guacamole Bites (THM S, Low Carb)

What You Need To Make These Guacamole Bites

  • Guacamole (I used this 3 step guacamole recipe from Oh Sweet Mercy)
  • THM Baking Blend or this Low Carb Baker’s Blend
  • My Mama’s Bake & Fry Mix or 2 toasted low carb tortillas that are ground into crumbs.
  • Egg Whites (carton or fresh)
  • Cooking spray or an oil mister
  • I used this Power Air Fryer Oven or the one you own. (you can also bake these in the regular oven)
  • People who like guacamole!

Creamy guacamole bites that are air fried in minutes. A wonderfully fun finger food for entertaining or lunch on the go.
Ingredients
For the filling
  • 1½ cups Easy 3 Step Guacamole
  • 2 Tablespoons THM Baking Blend
For the crust
  • ¼ cup egg whites
  • 2 Tablespoons THM Baking Blend
  • ½ cup Mama's Bake & Fry Mix
  • 1 tablespoon extra virgin olive oil
Instructions
  1. in a small bowl, prepare the guacamole, adding 2 TBS of baking blend to the mixture so that it thickens like brownie batter.
  2. Using a spoon or scoop, scoop mounds of guacamole onto a parchment lined sheet. Place in freezer for 20 minutes until firm.
  3. Remove guacamole from freezer and roll the mounds into balls. Roll in baking blend, dip into egg white and then roll in the bake & fry mix.
  4. Place coated balls onto air fryer racks, spritz with oil and bake for 8 minutes at 360 degrees. If you are making in batches you may need to check them at 6 min.
  5. Be careful removing them from the fryer as they are very delicate and the shell will break with too much pressure. They do firm up as they cool off.
Notes
* If you do not eat pork you can substitute 2 of the low carb whole wheat tortillas that have been toasted and ground for the Bake & Fry Mix.
