This Creamy Apple Cider Vinaigrette was inspired by my sister-in-law. We had gone over after church and she had this wonderful cranberry walnut salad that had roasted chicken in it with a bottled version of this vinaigrette.
When I googled it every recipe I found contained honey or agave in amounts that my blood sugar would never be able to handle. So I reconstructed the tastes of what we had with these ingredients. Apple Cider Vinegar, 0% Greek Yogurt (made from my Homemade Yogurt post) and some other super simple ingredients.

1/3 cup apple cider vinegar
2 Tablespoons THM Super Sweet Blend, or your Favorite on plan sweetener
1 clove garlic (minced)
2 tablespoons 0% Greek Yogurt
1/4 teaspoon black pepper (ground)
1/8 teaspoon THM Mineral Salt, (or Sea Salt)
2/3 cup Extra Virgin olive oil
I loved this Creamy Apple Cider Vinaigrette on a bed of dark leafy greens with mushrooms, cucumber and diced chicken.

- ⅓ cup apple cider vinegar
- 2 Tablespoons THM Super Sweet Blend
- 1 clove garlic (minced)
- 2 tablespoons 0% Greek Yogurt
- ¼ teaspoon black pepper (ground)
- ⅛ teaspoon THM Mineral Salt (or Sea Salt)
- ⅔ cup Extra Virgin olive oil
- Whisk apple cider vinegar, sweetener, garlic, yogurt, pepper and salt to combine. Drizzle olive oil into mixture as you continue to whisk until combined.
- You can also use a mini food processor or your blender cup to throughly combine the ingredients.
- Store in refrigerator for aprox 1 week, it never lasts that long here.
