I just made the favorite bread recipe (with 2 C egg whites) it looked beautiful. but can you tell my why it had a very undesirable smell of ammonia? I read somewhere why some breads can do this, but I don’t remember the answer, or where I read it! perhaps after it cools, that smell will diminish. (Oat fiber is from netrition.com ) used THM baking mix.

I have never had that happen. If your oat fiber is white in color then that is the same one that I have used and should not be an issue. If the oat fiber is a tan/brown it can sometimes have an off smell and taste.

I think we are using the same oat fiber.. it’s definitely ammonia smell. I’ll see if I can figure it out and report back 🙂
