SnickerDoodle Crumble

I'm loving this SnickerDoodle Crumble as both an on plan cereal and yogurt topping. I find that I crave cereal at times during my Trim Healthy Mama journey and have made a few different versions of on plan S meal cereals over the past couple of years to curb that craving. I also happen to love snicker-doodle cookies so this give me the best of both worlds. The crunchy goodness of cereal with the sweet cinnamon taste of snicker-doodles. I love using the THM baking blend to mix up these cereals as it crisps up nicely and isn't as calorie heavy as using a mix of almond flour and oat fiber ( although that does work also). This SnickerDoodle Crumble is going to be on my meal rotation for a very long time along with the ever popular Pumpkin Crumble I made last year. You may want to check that one out too. Peanut Butter Crunch is amazing mixed into skinny chocolate, on top of your yogurt or drenched in almond milk.

Ingredients
  • ½ cup THM Baking Blend
  • ½ cup THM Pristine Whey Protein Powder
  • ⅓ cup THM Super Sweet Blend
  • 1 teaspoon baking powder
  • ⅛ teaspoon salt
  • ¼ cup cold unsalted butter (cubed)
  • ¼ cup coconut oil (softened)
For topping
  • 2 teaspoons ground cinnamon
  • 2 tablespoons THM Super Sweet Blend
Instructions
  1. Preheat oven to 300 degrees.
  2. Mix baking blend, protein powder, sweet blend, baking powder and salt in a medium bowl. Cut butter and coconut oil into dry ingredients until crumbly.
  3. Dump mixture onto a rimmed baking sheet lined with parchment and bake for 20 minutes.
  4. sprinkle topping mix over hot cereal mixture as soon as you remove it from the oven. allow to cool on baking sheet for 5 minutes. Use a fork to break mixture up slightly into crumbles and allow to cool fully. This mixture will crisp up as it cools.
  5. Store in an airtight container for 2-3 weeks if it lasts that long.

    Sounds like a good treat! I really like THM but haven’t been good about being consistent. I wish I was more dedicated…pulled in too many directions!

      That happens so much the being pulled in so many different directions… some things that have helped over the last couple of years are to keep things simple… make sure I am meal planning and making things like this for something easy to grab and go when needed… I prep ahead puddings, cottage berry whip, S breads/rolls … split the cookbook recipes in 2 so that I can freeze one for a heat and eat… hope those ideas help you

    Thank you, Judy, this is fantastic! I think the texture of it would make a delicious pie crust or cheesecake crust as well, with the sweetener reduced.

    I adapted the recipe because when I got to the Super Sweet I didn’t want to add so much — it still was delicious with 1/2 Super Sweet and 1/2 pure stevia extract (converted). Also I doubled the recipe except for the topping and it was still very sweet and cinnamon-y.

    The genius of it is the texture. I highly recommend!
